Sue's Paleo Bread (GF, paleo)

This bread, a variation of our paleo chia bread, is a staple in our household. Here we use ground flax seed instead of chia seeds. Like the paleo chia bread, it's a breeze to make. One bowl, no kneading, no mess. Super easy, super healthy, and super delicious.

Sue's Paleo Bread
Makes 1 loaf

Ingredients:
2 cups almond flour (this is our favorite brand)
1/4 cup flax meal
2 tbsp coconut flour (a great, inexpensive, organic option)
1/2 tsp baking soda
generous pinch of salt
5 eggs
1 tbsp apple cider vinegar (this is our favorite brand)
1 tbsp coconut oil (this is our favorite brand)
1/2 tbsp maple syrup

Method:
1. Preheat oven to 350F.
2. In a bowl, mix together the almond flour, flax, coconut flour, baking soda, and salt.
3. Add in the eggs, apple cider vinegar, coconut oil, and maple syrup and mix together.
4. Line a bread pan with parchment paper and pour the batter in.
5. Bake for 25 - 30 minutes, until the top is golden and a knife slides out without any residue.
6. Enjoy!
