Vanilla “Ice Cream” Chia Pudding (GF, paleo, vegan)

Chock full of fiber and a great source of protein, calcium, iron, zinc, magnesium, and plant-based omega-3s, chia seeds are both very filling and very healthy. A superfood for clear, glowing skin and a happy, balanced digestive system.

As always, chia pudding makes an excellent, healthy breakfast or snack, but this one also works as dessert because it tastes like vanilla ice cream! It's creamy, decadent, and delicious. Feel free to adjust the amount of honey to suit your tastes. If, for example, you're making this for dessert, you may consider increasing the amount. Use raw honey over processed honey as the former is a much healthier option.

 
 

Vanilla “Ice Cream” Chia Pudding
Serves 1 - 2

Ingredients:
1/4 cup chia seeds
1/2 cup cashews, preferably soaked in filtered water for 1 - 2 hours
1 cup filtered water
1 banana
1 - 2 tsp raw honey
1/2 tsp vanilla extract
1/4 tsp cinnamon
pinch of sea or Himalayan salt
optional: fresh or frozen berries

Directions:
1. Place the cashews, water, banana, honey, vanilla extract, cinnamon, and sea salt in a blender and blend until smooth.
2. Pour over chia seeds and mix with a spoon.
3. Let sit in the fridge for at least 30 minutes to cool and firm up. If you would rather make something to serve right away, use half the water (i.e. 1/2 cup).
4. Serve topped with berries, if using, and enjoy!
