Cashew Chocolate Chip Cookies (GF, paleo, vegan)

Gooey, low in sugar, and so yummy.

Cashew Chocolate Chip Cookies (GF, paleo, vegan)
Makes about 15 cookies

1.5 cups blanched almond flour (I use this one)
3/4 cup cashew butter
1/2 cup applesauce or unsweetened almond milk yogurt (I like Kite Hill)
1/4 cup coconut palm sugar
2 tbsp maple syrup
1 tsp vanilla extract
¼ tsp baking soda
¼ tsp Himalayan or sea salt
1/4 cup dark chocolate chips (I use Lily’s, which are sweetened with stevia instead of sugar)
Optional: salt flakes to sprinkle on top (I use Maldon)

1. Preheat oven to 350 F and line a baking tray with parchment paper.
2. Mix all ingredients (except for salt flakes, if using) together in a bowl. Spoon out into cookies and then top with a little sprinkle of salt flakes.
3. Bake at 350 F for 13 - 15 minutes.
