Paleo Chia Bread (GF, paleo)

We love this bread, so much so that we make a loaf of it every week. It's so easy to make - no kneading and no mess. You literally just throw all the ingredients into one bowl, mix them together, and then bake.

Gluten-free breads can be tough. Not only do they often taste bland, but they also tend to cause blood sugar spikes. Not this one, which is both gluten- and grain-free. This bread is genuinely healthy so enjoy it without any guilt. We love it topped with goat cheese and blackberry jam or dipped into our broccoli soup, but it goes with anything and everything.

 
 

Paleo Chia Bread (GF, paleo, vegetarian)
Makes 1 loaf

Ingredients:
2 cups almond flour
2 tbsp chia seeds
2 tbsp coconut flour
1/2 tsp baking soda
1/4 tsp sea or Himalayan salt
5 eggs
1 tbsp apple cider vinegar
1/2 tbsp maple syrup
1/2 tbsp coconut oil, melted

Method:
1. Preheat oven to 350F.
2. In a bowl, mix together the almond flour, chia seeds, coconut flour, baking soda, and salt.
3. Add in the eggs, apple cider vinegar, maple syrup, and coconut oil and mix the batter.
4. Line a bread pan with parchment paper and pour the mixture in.
5. Bake for 25 - 30 minutes, until the top is golden and a knife slides out without any residue.
6. Enjoy!
