Gluten-free Blondies

A much healthier twist on a traditional blondie. Simple to make, super satisfying, and always a crowd pleaser. They hold extremely well and are even better the next day!

Gluten-free Blondies
Serves 6-9

Ingredients:
1/2 cup almond butter
1/2 cup coconut palm sugar
1/4 cup coconut oil, melted
1 egg (if vegan or sensitive to eggs, you can use a flax egg instead)
2 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt
1 cup almond flour
1/2 cup chocolate chips

Method:
1. Preheat oven to 350°F and line an 8x8 inch baking pan with parchment paper.
2. In a medium-sized bowl, mix together the almond butter, coconut palm sugar, coconut oil, egg, vanilla extract, baking soda, and salt until well combined.
3. Mix the almond flour into the batter.
4. Fold in the chocolate chips.
5. Pour batter into the prepared dish and gently press so it’s an even thickness across. 
6. Bake for 20 minutes, or until a toothpick placed in the center comes out clean.
7. Let cool for at least 10 minutes and enjoy!
